There are always going to be quirks, no matter the bike but the good thing about buying an older moto is that there are most likely many folks who have figured them out over the years and now posted about them somewhere on the interwebz! Gotta love Google.
Best piece of advice that I'd give is to learn about carbs! At least how to clean them is the first step, especially when you are looking into purchasing older bikes. They've usually been sitting a while.
