Seems like one wheel on a hitch might wander. Dual hitches, one on each side?
To the contrary, a single wheel trailer will track with your bike and after much research and reading I am now convinced is safer than a two wheel trailer. There was a recent report of trailer tire blow out on one side of a two wheeled trailer, dragging sideways and taking down a GW killing a married couple.
My original plan has been to build a two wheeled 4x8 tiny teardrop trailer that would sleep two with a/c and a kitchen galley in the rear end.

The benefit's of towing to a campground, un-hitching and go riding to come back to a ready made bed are obvious. (I still may do this someday) But, the more I thought it over, hauling a 4x8 trailer at even under 500 pounds say to mountain's would really kill my gas mileage, eat my tires faster and slow me down. You have a ridden with me enough to know that slow and easy is not my style.
Now I am thinking my six man tent with a blow up queen sized air mattress would be a better option.

Also have the added benefit of fitting a one wheel trailer through a motel room door for safe keeping if I hotel it on the road.
I watched 3 of them fly through the Cherohala Skyway in June and I doubt I could have kept up with them w/o a trailer. I will use a car top carrier as my body and put a cooler rack on the front of it. With all the room the ST already has I should have enough room to camp two up for a month. Much too small for what I want but here is a vid of the unigo trailer so you can get the idea.
I have my trailer hitch designed and know where to get all of the parts now and with any luck I'll have this set up for Windy Acres in October.
